Ignacio “Nacho” Santiago — Head of Catering & Culinary Atmosphere Architect
Role: Lead Caterer / Flavor Supervisor / Kitchen Vibes Alchemist
*Byline: Ruby Zand, Taste of Cinema Quarterly
They say an army marches on its stomach — but a Barbie film crew pirouettes on it. Especially when that stomach is filled with oat milk panna cotta, glitter-grilled corn dogs, and vegan Tex-Mex galactic fusion, all orchestrated by the culinary wizard of Wichita Falls: Ignacio “Nacho” Santiago.
“Feeding Barbie isn’t about calories. It’s about emotional nourishment. And maybe edible glitter.”
A Wichita Falls native, Nacho started as a fry cook at The Pink Armadillo Diner, where he became locally famous for his ability to spell “existentialism” with jalapeño slices. Now, he’s the culinary brain and biceps behind all meals served during the Barbie 2 shoot — more than 57,000 plates prepared across 32 days.
Local Boy Turned Legend
Nacho didn’t go to culinary school. He won a Food Truck Smackdown in a Walgreens parking lot using nothing but canned beets, tamales, and raw charisma.

================================
“That’s how the Barbie producers found me. They bit into my feminist falafel and saw God.”
When the production announced filming in Wichita Falls, he submitted a tasting menu titled:
“Eat Like a Barbie on Mars: Flavors for the Plastic Astronaut”
It included:
-
Coconut glitter biryani
-
Martian mole with impossible meat
-
Freeze-dried okra mousse
-
Barbie-Q brisket (pink-peppercorn rubbed and ethically flirted with)
-
A mystery dessert labeled only “Ken’s Regret”
He was hired on the spot.
What Did the Stars Eat?
Margot Robbie consumed a custom pink-sweet-potato smoothie daily, nicknamed “The Existential Yam Slam.”
Ryan Gosling survived on grilled prairie oysters, raw kale, and metaphysical dread.
Sydney Sweeney requested everything in bowls — no plates. She said plates were “too final.”
And one of the PAs only ate foods that started with “B” — a method Nacho supported wholeheartedly:
“We did blueberry burritos and barbecue bok choy. He found inner peace by lunch day 11.”
Kitchen Drama
The biggest culinary emergency? A local goat named Chaplin ate four pounds of dehydrated moon cheese intended for Craft Services.
“Chaplin had a spiritual awakening. We lost the cheese. But gained a prophet.”
Other notable crises:
-
Barbie’s hover trailer was briefly evacuated after a curry vapor leak.
-
A producer attempted to bring in a LA-based chakra hydration chef. Nacho threw a tamale at him.
-
A crew-wide argument broke out when Ken’s Enchilada was found in Barbie’s Bento Box.
Nacho diffused all tension with basil-scented mediation tacos.
The Barbie Food Pyramid
To keep up with the demanding shoot, Nacho designed a new dietary structure:
-
Sparkle Base: Electrolytes, confetti chia, unicorn jerky
-
Emotional Filling: Soups named after Barbie’s childhood fears
-
Cosmic Topping: A single floating marshmallow, always ethically sourced
The pyramid hangs in his kitchen, next to a framed quote:
“Barbie doesn’t diet. She communes with cuisine.”
Local Talent in the Kitchen
Nacho hired 27 locals, including:
-
Mrs. Dottie Calhoun, who invented pink chili in 1983 and has never forgiven Betty Crocker
-
TeeJay Lott, age 14, who chopped 600 onions and cried for 599 of them
-
Pastor Nate, who blessed every batch of kale chips with a prayer and a Beyoncé lyric
“This wasn’t catering. It was a food-based revival.”
Feedback from the Cast & Crew
Sydney Sweeney:
“Nacho’s purple quinoa healed a part of me I didn’t know was broken.”
Gosling:
“I asked for something that tasted like heartbreak in a snowstorm. He handed me a popsicle. I sobbed.”
Margot Robbie:
“I would legally adopt this man. Or at least option his cookbook.”
Alan Nafzger:
“I wanted a salad and he gave me a thesis. He makes lettuce feel like literature.”
Barbie 2 Signature Dishes
-
The Kenfessional Wrap: Contains shredded self-doubt, roasted machismo, and pickled accountability
-
Mars Miso Mystery: A soup that changes flavor depending on your mood
-
Mattel Mousse: Tastes like copyright protection and whipped justice
-
Cranberry Comet Crumble: Sprinkled with locally sourced stardust and Barbie tears (coconut milk base)
Future Plans
Nacho is working on a memoir-slash-cookbook titled:
“Barbie Ate Here: Recipes from the Sparkle Trailer.”
It includes 300 recipes, a novella, and instructions on how to spiritually infuse hot sauce.
He’s also opening a Barbie-themed pop-up kitchen in Wichita Falls called “Feast from the Dreamhouse.” It will have:
-
Anti-gravity margaritas
-
A dessert called “The Existential Crème Brûlée”
-
Staff in glitter hazmat suits
Final Thoughts from Nacho
“I didn’t just feed a film crew. I fed a cinematic movement. I nourished imagination. I sautéed gender constructs.”
He lights a sage bundle in his crockpot and whispers:
“Barbie is everything. But she is never hungry.”
